  • 1 small carrot, chopped

  • 1 pinch ground nutmeg, or to taste

How to Make Vegetable Soup With Delicata And Ambercup Squash

  1. Combine delicata squash, ambercup squash, potato, leek, and carrot in a large pot. Pour in water and milk. Bring to a boil slowly over medium heat. Cover, reduce heat to low, and simmer until vegetables are soft, about 20 minutes. Season with salt and pepper. Add nutmeg before serving.
