Slow Cooker Butternut Squash Stew Ingredients
butternut squash, diced
1 pound sage pork sausage, crumbled
3 potatoes, cut into small cubes
3 stalks celery, sliced
3 carrots, sliced
1 (15 ounce) can chickpeas, rinsed and drained
1 (15 ounce) can crushed tomatoes
1 large onion, diced
1 (8 ounce) can tomato sauce
1 green bell pepper, thickly sliced
4 cloves garlic, minced
1? teaspoons curry powder
1? teaspoons ground cumin
1? teaspoons Chinese five-spice powder
salt and ground black pepper to taste
How to Make Slow Cooker Butternut Squash Stew
Stir butternut squash, sausage, potatoes, celery, carrots, chickpeas, crushed tomatoes, onion, tomato sauce, green bell pepper, garlic, curry powder, cumin, five-spice powder, salt, and pepper together in a slow cooker or tagine.
Cover and cook on High until butternut squash is tender and sausage is cooked through, about 2 hours and 30 minutes. Stir ingredients halfway through the cooking process if possible.

Fortunately, I made this with out having all of the proper ingredients and it turned out great. I used sweet potatoes, 4 roma tomatoes, and kidney beans. My family really enjoyed the dish. It went well with the Trader Joes Pumpkin Crackers crushed into it.
Such a unique and yummy recipe Next time I will try it with sweet potatoes instead of russet just to have some fun, but its great as written too
This was very hearty I used precooked turkey sausage and put it in at the end just because I didnt want the grease. Will make again
I omitted most spices except garlic no potaoes just onion med squash italian sausage some chicken broth omg delish
Tastes great, but DEFINITELY needs more than 2.5 hours cooking time. The vegetables just are not tender after 2.5 hours. Next time, Ill cook it on Low for a full 8 hours.
