Recipe: My Amazing Tomato Basil Soup (Like Applebee's®)

This tastes just like the tomato basil soup they serve at Applebees®. The hubs loved it so thats saying something I always add a pinch of sugar to tomato-based sauce, but Im not sure that it needed it. Served it with baked fries with seasoned salt and grilled gouda cheese sandwiches on thick crusty bread, panini-style.

My Amazing Tomato Basil Soup (Like Applebee's®) Ingredients

  • 3 tablespoons olive oil

  • 1 small clove garlic, minced

  • 1 (10.75 ounce) can condensed tomato soup

  • cup bottled marinara sauce

  • (10.75 ounce) can water

  • 1 teaspoon chopped fresh oregano, or to taste

  • teaspoon ground black pepper

  • 1 tablespoon chopped fresh basil, or more to taste

  • 6 Italian-style seasoned croutons, or as needed

  • 2 tablespoons grated Parmesan cheese

How to Make My Amazing Tomato Basil Soup (Like Applebee's®)

  1. Heat olive oil in a large saucepan over medium heat. Saute garlic in hot oil until tender and fragrant, 2 to 3 minutes. Stir

  2. Stir condensed tomato soup and marinara sauce into garlic; slowly add water. Mix oregano and black pepper into soup; bring to a simmer, reduce heat to low, and cook until flavors blend, about 15 minutes. Stir basil into soup. Ladle into bowls and top with croutons and Parmesan cheese.

  • I made this soup , but I didnt have any tomato soup, so I blended 2 -28 oz. cans of diced tomatoes, followed the recipe added 3 tbsp oregano and 3 tbsp basil . Make the 6 serving recipe , so easy and delicious, everyone in the family loved it

  • Ive never had tomato basil soup at Applebees, but I can only hope that its as good as this. The fresh herbs and marinara add layers of flavor, and the croutons (mine were garlic & butter) and freshly-grated parmesan are the perfect topping. This soup has the bold and rich flavor that you get with homemade tomato soup when tomatoes are at their peak. Do allow it to simmer the 15 mins listed in the directions, as the flavors do intensify. Trust me, nobody will ever know that this soup wasnt made from scratch (no need to tell them, either) because it doesnt taste like you started with a can of tomato soup. Honestly, the quality of this soup surprised me. Thanks lainalee for sharing your recipe, this was a very nice lunch today.

  • Yummy just as written, VERY close to Applebees I added a splash of heavy cream because, well, what cant be made better by adding heavy cream?

  • We really liked this soup and will definitely make again. I also froze some for later meals and still tasted good. I made it in a crockpot and allowed it to simmer on low for 2 hours.

  • Delicious I used Amys Organic cream of tomato soup for the base. Its not condensed, so I just used about 1/4 cup of water. I didnt saut all the herbs and garlic, but used dried herbs from my garden last summer and garlic powder. It still turned out yummy I agree with another reviewer that heavy cream would be great instead of water :)

This is it This soup is SOOO delicious So far Ive made 2 batches over the past month and doubled the recipe each time. Didnt change a thing. I used Barillas marinara sauce--its rich, tomatoey and delicious as is the soup when its done. Quick and so easy. I want to freeze some but usually eat it all before I get around to freezing any. If you love tomato basil soup at Applebees, youll love this recipe.
