Recipe: Gobble Gobble Chili with Chipotle Baja Sauce

This is a wonderful low-fat zesty turkey chili finished with a fat-free Cheddar cheese and Greek yogurt Baja sauce. Serve with your favorite cornbread recipe.

Gobble Gobble Chili With Chipotle Baja Sauce Ingredients

  • 1 pound ground turkey

  • 1 green bell pepper, chopped

  • 1 onion, chopped

  • 3 stalks celery, chopped

  • 2 (15 ounce) cans spicy chili beans

  • 2 (14.5 ounce) cans diced chili-style tomatoes

  • 1 (15 ounce) can tomato sauce

  • 1 (12 fluid ounce) can or bottle beer

  • 1 chipotle chile in adobo sauce, chopped

  • 1 teaspoon ground cumin

  • 1 teaspoon ground black pepper

  • cup plain Greek yogurt

  • ? cup mayonnaise

  • 2 tablespoons lime juice

  • 2 cloves garlic

  • 1 chipotle chile in adobo sauce, chopped

  • 1 (8 ounce) package shredded reduced-fat Cheddar cheese

How to Make Gobble Gobble Chili With Chipotle Baja Sauce

  1. Heat a large skillet over medium-high heat and stir in the ground turkey. Cook and stir until the turkey is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Add bell pepper, onion, and celery. Continue to cook and stir until vegetables are tender, 5 to 10 minutes.

  2. Stir chili beans, tomatoes, tomato sauce, beer, 1 chopped chipotle chile, cumin, and black pepper into turkey mixture; simmer for 2 hours.

  3. Place Greek yogurt, mayonnaise, lime juice, garlic, and remaining 1 chopped chipotle chile in a food processor or blender; pulse until mixture is smooth. Refrigerate sauce until ready to use.

  4. Scoop chili into bowls; sprinkle with Cheddar cheese and drizzle with yogurt sauce.

  • Just finished a bowlful of this for dinner.. really yummy and a nice kick to it. I made a couple minor changes - For some reason I only bought one can of the chili beans so i added in a can of drained back ones that I had in the cupboard.. and I used red bell pepper since they were on sale for 25 cents, and the green ones werent. I cooked this in the crockpot too.. browned the meat and veggies and then tossed everything in for 6 hours on low

  • I thought this was okay. I would probably change a few things if I made it again:1. I ended up transferring the meat from the skillet to a larger pot when I realized how much stuff was going to go in it. Id probably just start with a decent sized stock pot and cook the chili in that.2. I think I want a bit more of the yogurt mix to top off the chili. Id probably double that next time.3. The final product tasted a bit more like a tomato sauce than a chili, so I think Id substitute more tomatoes for some or all of the sauce.But overall it tasted fine, and turned out okay.
