Ghost Pepper Bison Chili With Quinoa Ingredients
1 pound ground bison
cup chopped yellow onion
cup chopped green bell pepper
1 (14 ounce) can lower sodium beef broth
cup white quinoa, uncooked
1 (15 ounce) can black beans, drained, rinsed
1 (14.5 ounce) can Hunts Diced Tomatoes, undrained
1 (15 ounce) can Hunts Tomato Sauce
cup fresh corn kernels
2 tablespoons ghost pepper chili seasoning mix (see Cooks Tip)
1 large avocado - pitted, peeled, and diced
cup sour cream
? cup shredded Cheddar cheese
How to Make Ghost Pepper Bison Chili With Quinoa
Heat a large saucepan over medium-high heat. Add bison, onion, and green bell pepper; cook 5 to 7 minutes or until bison is crumbled and no longer pink, stirring occasionally. Drain.
Stir broth and quinoa into the saucepan. Bring to a boil. Cover, reduce heat, and simmer 15 minutes or until quinoa is tender.
Stir black beans, tomato sauce, undrained tomatoes, corn, and chili seasoning mix into the saucepan; simmer uncovered 15 minutes more, stirring occasionally.
Top each serving evenly with avocado, sour cream, and Cheddar cheese.

Ok, I made this a little differently than the recipe, but it turned out great My husband usually cooks, but hes now on a lower carb diet than me. I didnt have a green pepper, canned tomatoes or chili mix and didnt feel like going back out to get them. I nixed the onion due to allergies. As with another reviewer, I added more chili pepper and just added the tomato sauce we use for pasta. My hubby tasted and he, the fussy chef, loved it Only next time, Ill have to try to remember what I did
The was a pretty good recipe, but had way too little chili powder for the seasoning mix. Changed that to 1/2 cup, doubled all the other spices, and then it was terrific.
