Chipotle Tofu Soup Ingredients
1 large onion, diced
2 cloves garlic, minced
1 (28 ounce) can diced tomatoes with juice
2 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can black beans
1 (12 ounce) package firm tofu, cut into 1/2-inch cubes
1 cup sliced bok choy
1 tablespoon chipotle peppers in adobo sauce, chopped
1 teaspoon adobo sauce from chipotle peppers
teaspoon paprika
teaspoon dried oregano
salt to taste
lime, juiced
cup chopped fresh cilantro, or more to taste
How to Make Chipotle Tofu Soup
Heat a saucepan over medium heat and add onion. Cook and stir until translucent, about 5 minutes. Add garlic; cook until fragrant, about 1 minute. Add diced tomatoes, broth, beans, tofu, bok choy, chipotle peppers, adobo sauce. paprika, oregano, and salt. Bring to a boil. Reduce heat and simmer until heated through and slightly thickened, about 30 minutes. Pour into bowls and add lime juice and cilantro.
