Recipe: DeliStyle Fresh Broccoli Salad

Delicious variation of this favorite deli salad. Honey is absorbed more slowly than cane sugar, so this may be better tolerated by those who are more sensitive to sugar highs. Also, for those who find white or red onions just too strong of a flavor, Ive used green onion for a milder yet still onion-y layer.

Deli-Style Fresh Broccoli Salad Ingredients

  • 12 slices bacon, diced

  • 1 head broccoli, cut into florets

  • cup sliced green onion

  • 1 cup sweetened dried cranberries (such as Craisins)

  • 1 cup mayonnaise

  • cup honey

  • 2 tablespoons cider vinegar

How to Make Deli-Style Fresh Broccoli Salad

  1. Cook and stir bacon in a large skillet over medium-high heat until crisp, about 10 minutes. Drain bacon on a plate lined with paper towel.

  2. Toss broccoli, cranberries, and green onion together in a large bowl. Whisk mayonnaise, honey, and vinegar together in a small bowl. Add bacon to broccoli mixture and toss. Drizzle dressing over the salad; toss to coat.

  3. Refrigerate until cold, about 30 minutes.

  • Way too sweet for my taste I cut back on the honey, and wish I had also cut the Craisins in half. In addition, even though I chopped the largest head of broccoli I could find into florets, it wasnt enough - they were totally overwhelmed by the bacon and the Craisins, so I had to add more florets. I doubt I will make this again - sorry, Anne

  • I love it. I just finished making it and because I am the cook, I get to try it. It is yummy even before I put it in the fridge to let it marry I love the fact you use honey instead of sugar I have switched almost completely to honey. This was so fast to make up as well. It took me all of 10 minutes including the thick cut bacon. Oh, I cut the bacon down to 5 slices because it is thick cut bacon. Otherwise, I would have used all 12 slices.

  • Ive made this a couple of times and it is always a hit Someone always asks for the recipe. I used red onion instead of green. Using honey instead of sugar makes it taste better.
