Recipe: Instant Pot® Spicy Beef Curry Stew

Pegan and paleo-friendly spicy beef curry stew made in an Instant Pot®.

Instant Pot® Spicy Beef Curry Stew Ingredients

  • 2 tablespoons olive oil

  • 2 pounds cubed beef stew meat

  • salt and ground black pepper to taste

  • 2 jalapeno peppers, chopped

  • 4 cloves garlic, minced

  • 1 tablespoon minced fresh ginger root

  • 4 tablespoons curry powder

  • 2 cups beef broth

  • 1 (28 ounce) can fire-roasted diced tomatoes

  • 1 pound Yukon Gold potatoes

  • 3 carrots, sliced

  • 1 large onion, sliced

How to Make Instant Pot® Spicy Beef Curry Stew

  1. Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Pour in olive oil and heat until sizzling; add meat and season with salt and pepper. Cook until browned, 5 to 7 minutes per side.

  2. Transfer meat to a plate, reserving juices in the pot. Add jalapenos, garlic, and ginger to the pot. Cook and stir until tender, about 2 minutes. Season with curry powder.

  3. Pour 1/2 of the beef broth into the pot; scrape brown bits from the bottom of the pot using a wooden spoon. Return meat to the pot with remaining beef broth, tomatoes, potatoes, carrots, and onion. Close and lock the lid.

  4. Select high pressure according to manufacturers instructions and set timer for 35 minutes. Allow 10 to 15 minutes for pressure to build.

  5. Release pressure using the natural-release method according to manufacturers instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturers instructions, about 5 minutes more. Unlock and remove the lid.

  • This is SO good, easy to make and full of flavor I recommend browning the meat in batches, otherwise the pot is too crowded and the meat tends to steam. All I needed to add was a bit of salt at the end. If you dont want your veggies too soft, I suggest you cook the meat for 20-25 minutes under pressure, add in the veggies, then finish cooking for 10-15 more minutes. There was no indication on how to prepare the potatoes, so I peeled them and cut them into 1.5" chunks. The beef comes out so tender. This has the perfect amount of heat, not overly spicy at all. I garnished with some minced cilantro. Perfect

  • Absolutely delicious The amount of flavor will depend on the type and quality of your curry mix. I only had one 13.5oz can of the tomatos so for the remaining liquid I used a can of coconut milk which was fabulous.

  • Flavor was excellent.... but Im not a fan of beef stew meat because no matter what it seems chewy or tough.I prefer using beef shank which I will use in the future when I make this.

  • I made this Spicy Beef Curry Stew and it was almost a 5 star winner but I could hardly taste the curry. . .followed the recipe to the ounce but I guess I expected more curry flavor. All-in-all the stew came out very good and I will make it again.

I omitted the carrots as I didnt have any, added more curry to suite my tastes and added regular diced tomatoes as I didnt have fire roasted. Despite my omissions it was a great meal and even freezes well so you can enjoy later.
