Recipe: Zesty Hoppin John Salad

I created this salad version of Hoppin John by combining a number of ingredients from other Hoppin John recipes and adding cilantro, tomatillos, and lemon juice for a zesty flavor. The salad is just as good without red pepper for those with discerning palates. Also as an alternative, a favorite hot sauce can be substituted for the red pepper with each individual serving. I like to add a dash of Louisiana-style cayenne pepper sauce to mine.

Zesty Hoppin John Salad Ingredients

  • 3 (15 ounce) cans black-eyed peas, drained

  • 8 stalks celery, cut into 1/4-inch dice

  • 10 roma (plum) tomatoes, cut into 1/4-inch dice

  • 1 cucumber, cut into 1/4-inch dice

  • 1 red onion, cut into 1/4-inch dice

  • 1 green bell pepper, cut into 1/4-inch dice

  • 1 yellow bell pepper, cut into 1/4-inch dice

  • 1 orange bell pepper, cut into 1/4-inch dice

  • 2 tomatillos, cut into 1/4-inch dice

  • cup lemon juice

  • cup balsamic vinegar

  • cup olive oil

  • 1 tablespoon chopped cilantro

  • teaspoon red pepper flakes, or to taste

  • 4 leaves romaine lettuce, or as needed

How to Make Zesty Hoppin John Salad

  1. Combine black-eyed peas, celery, roma tomatoes, cucumber, red onion, green, yellow, and orange bell peppers, and tomatillos in a salad bowl. Gently stir lemon juice, balsamic vinegar, olive oil, cilantro, and red pepper flakes into the salad. Chill before serving; serve over romaine lettuce leaves.

  • Excellent recipe, I also added avocado to this Nice summer salad

  • Terrific I had to sub in for the black-eyed peas but I wanted to try it& had everything else. So I used 1/3 of each: Lima beans, white beans& chick peas. Makes a large salad

  • This recipe is so refreshing I made it according to the recipe,except I opted out of the cucumber, because I dont really like it. This recipe is a great jumping-off point. Next time I make it I might add two grilled chicken breasts cut into bite sized pieces. It might be good with bacon crumbles and shredded cheddar, the possibilities are endless Thanks, Gumaraid

  • Enjoyed this salad a lot. Scaled it here to 3 servings to use only 1 can of black-eyed peas, and I ended up with enough salad to easily make 4 servings. Didnt have a tomatillo, added salt and black pepper, but otherwise kept to the recipe; except didnt use red pepper flakes since I was serving it along side a spicy Cajun Chicken recipe. Wanted this to be a fresh, cooling element along side the main and not another source of spice. Worked excellent for that. Thats a meal Ill make often.
