A great summer smoothie that uses juicy local peaches, overripe bananas, and fresh lemon verbena. If you dont use already chilled peaches and frozen bananas, pour it over ice cubes.

Vegan Peach-Banana-Coconut Smoothie Ingredients

  • 2 ripe peaches, chilled

  • 2 ripe bananas, peeled and frozen

  • 15 leaves fresh lemon verbena

  • 1 cup reduced-fat coconut milk

  • 1 lime, juiced

  • 1 tablespoon water, or more if needed

  • 4 cubes ice cubes

How to Make Vegan Peach-Banana-Coconut Smoothie

  1. Combine peaches, bananas, lemon verbena, coconut milk, and lime juice in a blender; blend until smooth. If too thick, add water until mixture reaches desired consistency.

  2. Add ice cubes to 2 tall glasses and pour peach mixture on top. Serve immediately.
