Recipe: Vanilla Atole

This is a thick, hot Mexican drink with a taste of vanilla and cinnamon. My whole family loves it when I make it.

Vanilla Atole Ingredients

  • 4 cups milk

  • 1 cinnamon stick

  • 3? tablespoons white sugar

  • 1? tablespoons pure vanilla extract

  • ? cup water

  • 4 tablespoons cornstarch

How to Make Vanilla Atole

  1. Combine milk and cinnamon stick in a saucepan over medium heat. Bring to a boil, stirring constantly to prevent milk from burning on the bottom. Add sugar and stir for 2 minutes. Add vanilla extract and stir for another 2 minutes.

  2. Mix water and cornstarch in a small bowl until no lumps remain. Pour into the boiling milk and stir until thick, about 8 minutes.

Vanilla Atole Reviews

  • Authentic atole is made with masa which is corn flour not cornstarch. The taste was good but the consistency was very thick. It was very difficult to drink so I wound up eating this with a spoon. This recipe also makes extremely small servings, more like 2 not 4 servings. Thanks for the recipe but I doubt that I will make this again.
