Recipe: Carrot Salad with Golden Chardonnay Raisins

A sweet and savory carrot salad. Very simple and easy to make with pre-shredded organic carrots. Golden raisins plumped with Chardonnay wine add sweetness and tang.

Carrot Salad With Golden Chardonnay Raisins Ingredients

  • ? cup golden raisins

  • cup Chardonnay white wine

  • 2 cups shredded carrots

  • cup mayonnaise

  • 2 tablespoons minced chives

How to Make Carrot Salad With Golden Chardonnay Raisins

  1. Soak raisins in Chardonnay white wine in a bowl until plump, about 1 hour.

  2. Drain and reserve any remaining liquid from the plumped raisins.

  3. Mix carrots, mayonnaise, and chives together in a large bowl.

  4. Fold plumped raisins into carrot mixture.

  5. Mix reserved soaking liquid into the salad a tablespoon at a time until desired texture is achieved.

  • I shredded the carrots and used the green part of scallions rather than chives. The flavors didnt really work together for us as well as Id thought they would. It did make for a unique side dish for our meal. Thanks

  • I followed the recipe for the most part. I soaked the raisins for only about 20 minutes, made a smaller patch and used dried chives. Although I was dubious about the combination of ingredients, it turned out to be quite tasty. Even had a second helping. -YRob

  • Great riff on a classic. Added celery and used regular (stale) raisins - white wine helped with the stale issue and is a great idea all around.

  • A very good flavor using the chardonnay wine and the only changes I made was plumping the raisins approximately 2 hours and I added a little sugar. The taste was so good, I am making it again and will double the recipe. Oh, and when I drained the raisins, I drank the wine and it was better than the original, so I will increase the wine
