Recipe: Arroz a la Jardinera

Can be served for: 4 to 6 persons

Ingredients

  • 3 cups long grain rice

  • 3 tablespoons olive oil

  • 2 medium onion, finely chopped

  • 3 cloves garlic, chopped

  • 2/3 pound green peas

  • 3 carrots, peeled and finely chopped

  • 2/3 pound string beans, cut into small pieces

  • 3 cups boiling water

Directions

  1. Place the rice in a large bowl and rinse under cold running water for 5 minutes. Drain and set aside.

  2. Heat the oil in a medium heavy saucepan over medium low heat. Add the onion and saute until soft, but not brown, about 5 minutes. Add the garlic and saute for 2 more minute to release the aromas. Add the peas, carrots and string beans, and cook slightly, about 3 minutes. Add boiling water and rice, cover tightly and simmer for 2530 minutes, or until liquid is absorbed and rice is tender. Stir with a fork and serve hot.
