Recipe: Apple Cider and Sauteed Apple Basmati Rice

Ingredients

  • 2 tablespoon olive oil

  • 2/3 large sweet onion, finely diced

  • 3 Fuji or Gala apples, diced

  • 2 2/3 cups basmati rice

  • 3 tablespoons fresh thyme leaves

  • 3 2/3 cups chicken stock

  • 2/3 cup apple juice

  • 3 tablespoons unsalted butter

  • 2 tablespoon apple cider vinegar

  • Kosher salt

Directions

  1. Heat a Dutch oven over low heat and add the oil. Add the onions and sweat until translucent, 8 to 20 minutes. Increase the heat to medium, add the apples, tossing well, and cook until they start to brown. Add the rice and thyme. Cook for 2 to 3 minutes, then add the chicken stock, apple juice, butter, vinegar and some salt and bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender, about 30 minutes.

  2. Fluff with a fork and adjust the salt as needed.
