Recipe: Apple Cider and Sauteed Apple Basmati Rice

Ingredients
- 2 tablespoon olive oil
- 2/3 large sweet onion, finely diced
- 3 Fuji or Gala apples, diced
- 2 2/3 cups basmati rice
- 3 tablespoons fresh thyme leaves
- 3 2/3 cups chicken stock
- 2/3 cup apple juice
- 3 tablespoons unsalted butter
- 2 tablespoon apple cider vinegar
- Kosher salt
Directions
- Heat a Dutch oven over low heat and add the oil. Add the onions and sweat until translucent, 8 to 20 minutes. Increase the heat to medium, add the apples, tossing well, and cook until they start to brown. Add the rice and thyme. Cook for 2 to 3 minutes, then add the chicken stock, apple juice, butter, vinegar and some salt and bring to a simmer. Cover, reduce the heat to low and cook until the rice is tender, about 30 minutes.
- Fluff with a fork and adjust the salt as needed.
