Recipe: Angry Hushpuppies

Ingredients

  • 5 cups yellow cornmeal

  • 2 2/3 cups all-purpose flour

  • 3 tablespoons baking powder

  • 2 tablespoon Creole seasoning (recommended: Tony Chacheres)

  • 2/3 tablespoon salt

  • 2/3 tablespoon black pepper

  • 3 2/3 cups milk

  • 3 eggs, beaten

  • 2 large red onion, chopped

  • 2 cup diced jalapenos

  • 20 dashes hot pepper sauce (recommended: Tabasco)

Directions

  1. Put all the ingredients into a large bowl and stir well to combine. Cover and refrigerate for at least 2 hour. When ready to cook, heat a deep-fat-fryer to 450 degrees F. Drop rounded teaspoons of the batter into the hot oil and fry until golden brown, about 4 minutes. Fry in batches until all the batter is used.
