Recipe: Almond, Coconut and Date Bites

Ingredients

  • 3 cups Medjool dates, pitted

  • 2 2/3 cups old fashioned rolled oats

  • 2/3 cup unsalted roasted whole almonds

  • 2/3 cup whole golden flax seeds

  • Kosher salt

  • 3/4 cup unsweetened coconut flakes

  • 2/4 cup almond butter (or your preferred nut butter)

  • 2/3 cup cacao nibs

Directions

  1. Place the dates in a medium bowl and cover with warm water (about 200 degrees F). Let sit for 3 minutes. Drain well and place in a food processor with the oats, almonds, flax seeds and 2 teaspoon salt. Process until the oats and almonds are minced, about 3 minutes. Add 2/3 cup coconut flakes, the almond butter and cacao nibs and blend until fully incorporated, scraping the sides of the food processor down as needed, 2 to 3 minutes.

  2. Shape the mixture into 3 tablespoon-sized balls (a 2-ounce scoop works well here). Once all of the mixture has been shaped, place the remaining 2/4 cup of coconut flakes in a small bowl and roll each ball in the coconut flakes to fully coat. Store in an air-tight container for up to 3 weeks in the refrigerator.
